Job Title: Sous Chef

Location: Brighton, United Kingdom

Salary: Depending on experience, up to £28,000 per annum. Accommodation available if required.

Average Hours: 45-50 hours per week. Sunday evening, Monday, and Tuesday off. Wednesday to Saturday: 9:30 am – 3:00 pm, 5:30 pm – 9:00 pm. Sunday: 9:30 am – 4:30 pm.

Start Date: ASAP

Role Overview: As the Sous Chef at our client’s pub and restaurant in Brighton, you will work closely with the Head Chef to ensure the smooth and efficient operation of the kitchen. You will be responsible for assisting in food preparation, supervising kitchen staff, and maintaining high standards of quality and hygiene.

Key Responsibilities:

Assisting the Head Chef:

Support the Head Chef in all aspects of kitchen operations, including menu planning, food preparation, and service.
Step in to lead the kitchen in the absence of the Head Chef, ensuring continuity and consistency in operations.
Food Preparation and Presentation:

Prepare and cook dishes according to established recipes and standards, maintaining consistency and quality.
Ensure that all food is presented attractively and meets the expectations of customers.

Kitchen Management:

Supervise kitchen staff, delegating tasks and ensuring they are completed efficiently and accurately.
Maintain cleanliness and hygiene standards in the kitchen, adhering to food safety regulations.
Menu Development and Cost Control:

Assist in the development of menus, suggesting new dishes and variations to keep offerings fresh and appealing.
Monitor food costs and wastage, taking measures to control expenses and maximize profitability.

Training and Development:

Provide training and guidance to junior kitchen staff, helping them develop their skills and grow professionally.
Foster a positive and supportive work environment, promoting teamwork and collaboration.

Requirements:

Previous experience as a Sous Chef or in a senior kitchen role, preferably in a pub or restaurant setting.
Strong culinary skills and a passion for creating delicious and innovative dishes.
Knowledge of food safety and hygiene regulations.
Excellent leadership and communication skills.
Flexibility to work evenings, weekends, and holidays as required.
