Duties include but not limited to:

  • Manage the daily operation of the kitchen by delegating responsibilities to subordinates as required;
  • Ensure that the Department’s overall budgets are adhered to;
  • Coordinate service delivery in a timely fashion across all hotel outlets;
  • Maintain product consistency by conducting inspections of seasonings, portions and appearance of food;
  • Create an environment for employees that is aligned with the company culture through constant communication and reinforcement;
  • Train kitchen staff in order to provide best results in minimum time and maximization of the available resources;
  • Make sure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish which leaves the kitchen door;
  • Order supplies to stock inventory appropriately
  • Comply with and enforce Health and Safety regulations amongst the kitchen staff;

The selected candidate must:

  • Have 3 Year + prior experience in a similar position within a hotel environment;
  • Proven experience of managing a kitchen brigade;
  • Have the ability to work under pressure
  • Possess multi-tasking, prioritising and efficient time-management abilities;
  • Be systematic, orderly, forward-looking and attentive to detail; 
  • Have a ‘can do’ attitude and a high level of commitment.
